Hot Cross Buns

Ingredients
  • cup (500g) flour
  • 1 cube (15g) yeast
  • 1/2 cup (80g) sugar
  • 1 teaspoon salt
  • 1 tsp spices
  • 1/2 Cup (80g) chocolate drops
  • 1 cup (250ml) warm milk (temperature at 110°F (45°C)
  • 1/3 cup 60g melted and cooled butter
  • 1 egg
Glaze:
  • tablespoon flour
  • 1 tablespoon icing sugar
  • 1 tablespoon hot milk
Instructions
  1. Mix the flour into a large bowl. Add the yeast, sugar and spices and mix well to combine.

  2. Make a well in the centre and put in the milk and butter. Mix, then wait 15 minutes. Add in the egg and salt. Mix with a wooden spoon then bring the dough together with your hands, pressing into it until it forms a ball.
  3. Transfer dough onto a lightly floured surface and knead for 5-10 minutes.
  4. Transfer dough back into the bowl and cover it. Leave in a warm place to rise until doubled in size (about 1 hour depending on how warm the room is).
  5. Punch down dough and transfer onto lightly floured surface. Sprinkle with 3/4 of the chocolate drops and knead the dough for 2-3 minutes.
  6. Divide dough into 12 or 15 even portions Roll each piece into round smooth balls and arrange on baking sheet (= lastra da forno), leaving space between each bun to allow them to rise.
  7. Cut the Buns with a knife to make a cross on their top.
  8. Cover and place in a warm place once again to prove for 20-30 mins, until doubled and just touching.  Preheat oven to 400°F (200°C).
  9. Make the white glase simply mixing the ingredients.
  10. Before baking, glaze the buns with milk or egg and glaze the crosses with the white glaze.
  11. When oven is hot, bake buns for 20 minutes until they are golden brown and sound hollow inside when tapped.
